Prepare the Mahi Mahi
Preheat the oven to 375°F (190°C). Pat the mahi mahi fillets dry and season with salt and pepper. Dip each fillet into the pecan-bread crumb mixture, pressing to adhere. Heat olive oil in a skillet over medium-high heat and sear the fillets for 2-3 minutes on each side until golden brown. Transfer to a baking sheet and bake for 10-15 minutes until the fish is cooked through.

Cook the Bacon and Shrimp
In the same skillet, cook the bacon until crispy. Remove and set aside, then add minced garlic to the bacon fat and sauté for 1 minute. Add the shrimp and cook for 3-4 minutes until pink. Pour in the heavy cream and bring to a simmer. Stir in Parmesan cheese and crumbled bacon, and season with salt and pepper.

Assemble the Dish
To serve, place a generous scoop of cheddar cheese grits on each plate. Top with a pecan-crusted mahi mahi fillet and spoon the sautéed shrimp and smoky bacon cream sauce over the top. Garnish with additional Parmesan cheese if desired.
