Cooking Instructions

  1. 1

    Prepare the Grits

In a pot, bring 4 cups of water to a boil. Add the grits and a pinch of salt. Cook according to package instructions, usually about 20-25 minutes, stirring occasionally. Once cooked, stir in cheddar cheese and butter, then set aside.

  2. 2

    Prepare the Pecan Crust

In a food processor, pulse the pecans until finely chopped. In a bowl, mix the chopped pecans with bread crumbs, salt, and pepper.

  3. 3

    Prepare the Mahi Mahi

Preheat the oven to 375°F (190°C). Pat the mahi mahi fillets dry and season with salt and pepper. Dip each fillet into the pecan-bread crumb mixture, pressing to adhere. Heat olive oil in a skillet over medium-high heat and sear the fillets for 2-3 minutes on each side until golden brown. Transfer to a baking sheet and bake for 10-15 minutes until the fish is cooked through.

  4. 4

    Cook the Bacon and Shrimp

In the same skillet, cook the bacon until crispy. Remove and set aside, then add minced garlic to the bacon fat and sauté for 1 minute. Add the shrimp and cook for 3-4 minutes until pink. Pour in the heavy cream and bring to a simmer. Stir in Parmesan cheese and crumbled bacon, and season with salt and pepper.

  5. 5

    Assemble the Dish

To serve, place a generous scoop of cheddar cheese grits on each plate. Top with a pecan-crusted mahi mahi fillet and spoon the sautéed shrimp and smoky bacon cream sauce over the top. Garnish with additional Parmesan cheese if desired.
