Prepare the Fish
Choose your fish selection. Pat the fillets dry with paper towels.

Make the Blackening Seasoning
In a small bowl, mix together paprika, cayenne pepper, garlic powder, onion powder, dried oregano, dried thyme, salt, and black pepper.

Season the Fish
Rub the blackening seasoning generously over both sides of each fish fillet.

Grill or Blacken the Fish
For grilling, preheat the grill to medium-high heat and cook the fish for about 4-5 minutes per side until cooked through. For blackening, heat a cast-iron skillet over high heat and add a little oil. Cook the fish for about 2-3 minutes per side until blackened and cooked through.

Prepare the Lemon Aioli
In a bowl, combine mayonnaise, lemon juice, minced garlic, salt, and black pepper. Stir until well mixed.

Serve
Serve the grilled or blackened fish with a side of lemon aioli for dipping.
