Prepare the Filet
Season the USDA Choice Tenderloin Filet with salt and black pepper. Heat a skillet over medium-high heat and add 1 tablespoon of olive oil. Sear the filet for about 4-5 minutes on each side for medium-rare, or until desired doneness. Remove from skillet and let rest.

Sauté the Shrimp
In the same skillet, add the remaining olive oil and butter. Once melted, add minced garlic and sauté for about 30 seconds until fragrant. Add the Gulf shrimp and Cajun seasoning, cooking for about 2-3 minutes until shrimp are pink and cooked through.

Prepare the Sauce
Add diced tomatoes and heavy cream to the skillet with the shrimp. Reduce heat to medium-low and let it simmer for about 5 minutes until the sauce thickens slightly. Stir in half of the grated Parmesan cheese until melted and combined.

Serve
Place the rested filet on a plate, top it generously with the Cajun shrimp and sauce. Sprinkle with the remaining Parmesan cheese and chopped fresh parsley for garnish. Serve immediately.
