    Rinse the catfish fillets under cold water and pat them dry with paper towels.

    In one bowl, combine flour, salt, black pepper, and cayenne pepper. In a second bowl, whisk the eggs and buttermilk together. In a third bowl, place the cornmeal.

    Bread the Catfish

    Coat each catfish fillet first in the flour mixture, then dip it into the egg mixture, and finally coat it with cornmeal. Ensure each fillet is well-covered.

    In a large skillet, heat the oil over medium-high heat until hot (about 350°F or 175°C).
