In one bowl, combine the cornmeal, flour, cajun seasoning, salt, and black pepper. In another bowl, whisk together the buttermilk and eggs.

Bread the Catfish
Dip each catfish fillet into the buttermilk mixture, allowing excess to drip off, then dredge in the cornmeal mixture, ensuring an even coating.

Heat the Oil
In a large skillet, heat the vegetable oil over medium-high heat until hot but not smoking.

Fry the Catfish
Carefully place the breaded catfish fillets in the hot oil. Fry for about 4-5 minutes on each side, or until golden brown and cooked through. Remove and drain on paper towels.
