Preparation

  1. 1

    Prepare the Bacon

Cook the bacon slices in a skillet over medium heat until crispy. Remove from the skillet and drain on paper towels.

  2. 2

    Cook the Eggs

In the same skillet, crack the eggs and cook them to your desired doneness (sunny-side up or over-easy). Season with salt and pepper.

  3. 3

    Chop the Vegetables

While the bacon and eggs are cooking, chop the iceberg lettuce into wedges and chop the tomato into wedges.

  4. 4

    Prepare the Fried Shallots

If not using store-bought, thinly slice shallots and fry in hot oil until golden brown, then drain on paper towels.

Assembly

  1. 5

    Assemble the Wedge

On a plate, place a wedge of iceberg lettuce, top it with tomato wedges, crispy bacon, fried shallots, and the cooked eggs. Drizzle generously with bleu cheese dressing.
