Preparation

    Prepare Quinoa

    Rinse quinoa under cold water. In a medium saucepan, combine quinoa, water, and salt. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until water is absorbed. Fluff with a fork and set aside.

    Roast Vegetables

    Preheat the oven to 400°F (200°C). Toss diced bell pepper, zucchini, and red onion with olive oil, salt, and pepper. Spread on a baking sheet and roast for 20-25 minutes until tender and slightly caramelized.

    Grill Salmon

    Preheat a grill or grill pan over medium-high heat. Brush salmon fillets with olive oil and lemon juice, then season with salt and pepper. Grill salmon for about 4-5 minutes per side, or until cooked through and flaky.

    Make Green Goddess Dressing

    In a blender, combine Greek yogurt, fresh herbs, lemon juice, garlic, salt, and pepper. Blend until smooth and creamy. Adjust seasoning to taste.

    In a large bowl, layer quinoa, roasted vegetables, kale, and spinach. Top with grilled salmon and drizzle with green goddess dressing. Serve immediately.
