Pork Chops

    Prepare the Pork Chops

    Rub the pork chops with Madras curry powder, salt, and black pepper. Let them marinate for at least 30 minutes.

    Cook the Pork Chops

    Heat olive oil in a skillet over medium-high heat. Add the pork chops and cook for about 5-7 minutes on each side, or until they reach an internal temperature of 145°F (63°C). Remove from heat and let rest.

Pineapple Pear Chutney

    Make the Chutney

    In a saucepan, combine pineapple, pear, red onion, brown sugar, apple cider vinegar, ginger, and cinnamon. Cook over medium heat for about 15-20 minutes, stirring occasionally, until the mixture thickens. Set aside.

Fried Apple Bananas

    Prepare the Fried Banana

    In a skillet, melt butter over medium heat. Add sliced bananas and brown sugar. Cook until bananas are golden brown, about 3-4 minutes, then remove from heat.

Garlic Mashed Potatoes

    Make the Mashed Potatoes

    Boil potatoes in salted water until tender, about 15-20 minutes. Drain and return to pot. Add minced garlic, butter, and milk. Mash until smooth. Season with salt to taste.
