Kalbi (Beef Short Ribs)

White Rice

Method

Kalbi Preparation

  1. 1

    Marinating the Ribs

In a large bowl, combine soy sauce, brown sugar, sesame oil, minced garlic, chopped green onions, black pepper, and water. Mix well. Add the beef short ribs to the marinade and let it marinate for at least 3 hours, preferably overnight in the refrigerator.

  2. 2

    Grilling the Ribs

Preheat the grill to medium-high heat. Remove the ribs from the marinade and grill for about 5-7 minutes on each side or until cooked through and slightly charred. Discard the remaining marinade.

Kim Chee Namasu Preparation

  1. 3

    Preparing the Kim Chee

In a large bowl, combine chopped napa cabbage and julienned carrot. In a separate bowl, mix rice vinegar, sugar, salt, and red pepper flakes until dissolved. Pour the mixture over the vegetables and toss well. Let it sit for at least 30 minutes to marinate.

White Rice Preparation

  1. 4

    Cooking the Rice

Rinse jasmine rice under cold water until the water runs clear. In a pot, combine the rinsed rice and water. Bring to a boil, then reduce heat to low, cover, and simmer for about 15-20 minutes until the rice is tender and water is absorbed. Fluff with a fork before serving.
