Grilled Salmon

Asian Peanut Pesto

Garlic Mashed Potatoes

Sautéed Bok Choy and Shimeji Mushrooms

Method

Grilled Salmon

  1. 1

    Prepare the Salmon

Preheat a grill to medium-high heat. Brush the salmon fillets with olive oil and season with salt and black pepper. Grill the salmon for about 4-5 minutes on each side, or until cooked through and flaky. Set aside.

Asian Peanut Pesto

  1. 2

    Make the Pesto

In a food processor, combine peanut butter, soy sauce, ginger, minced garlic, lime juice, cilantro, and water. Blend until smooth. Adjust seasoning to taste.

Garlic Mashed Potatoes

  1. 3

    Prepare the Potatoes

Boil the cubed potatoes in salted water until tender, about 15-20 minutes. Drain and return to pot. Melt butter with minced garlic in a small pan and add to potatoes. Add milk, salt, and pepper, then mash until smooth and creamy.

Sautéed Bok Choy and Shimeji Mushrooms

  1. 4

    Sauté the Vegetables

In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant. Add bok choy and shimeji mushrooms, sautéing until tender, about 5-7 minutes. Stir in soy sauce and cook for an additional minute.

Taro Crisps

  1. 5

    Fry the Taro

Heat vegetable oil in a deep frying pan over medium-high heat. Fry the taro slices in batches until golden and crispy, about 3-5 minutes. Remove with a slotted spoon and drain on paper towels. Season with salt immediately.
