Prepare the Fish
In a mixing bowl, combine flour, cornstarch, baking powder, salt, and pepper. Gradually whisk in Longboard beer until smooth. Dip fish fillets into the batter, allowing excess to drip off.

Fry the Fish
Heat oil in a large skillet over medium-high heat. Once hot, carefully add battered fish fillets and fry for about 3-4 minutes per side, or until golden brown and cooked through. Remove and drain on paper towels.

Warm the Tortillas
In a separate skillet, warm the corn tortillas over medium heat for about 30 seconds on each side until pliable.

Assemble the Tacos
On each tortilla, place a generous amount of shredded cabbage, a piece of fried fish, a spoonful of pico de gallo, and drizzle with southwestern ranch dressing.

Serve with Taro Chips
Serve the tacos immediately with a side of taro chips for crunch.
