Green Papaya Slaw

Method

Fish Preparation

    Prepare the Batter

    In a bowl, combine the flour, baking powder, salt, and black pepper. Gradually whisk in Longboard beer until the batter is smooth and thick.

    Heat the Oil

    In a deep skillet, heat vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Fry the Fish

    Dip each fish fillet into the batter and carefully place in the hot oil. Fry for 4-5 minutes on each side or until golden brown. Remove and drain on paper towels.

Garlic Fries Preparation

    Cook the Fries

    Cook the french fries according to package instructions until crispy. If using fresh-cut, fry until golden and crispy.

    Add Garlic and Parsley

    In a separate pan, heat olive oil and sauté minced garlic until fragrant. Toss the cooked fries in the garlic oil and sprinkle with parsley and salt.

Green Papaya Slaw Preparation

    Mix the Slaw

    In a large bowl, combine shredded green papaya, carrot, lime juice, fish sauce, sugar, and salt. Toss well to combine and set aside.

Tartar Sauce Preparation

    Prepare the Tartar Sauce

    In a bowl, mix together mayonnaise, chopped pickles, capers, lemon juice, and salt to taste. Refrigerate until ready to serve.

Assembly

    Serve

    Plate the crispy fish with garlic fries and green papaya slaw on the side. Serve with tartar sauce for dipping.
