Coconut Shrimp

Prepare the Shrimp
In a shallow dish, season flour with salt and pepper. In another dish, beat the eggs. In a third dish, place coconut flakes. Dredge each shrimp in flour, dip in egg, and then coat with coconut flakes.

Fry the Shrimp
Heat oil in a deep skillet over medium-high heat. Fry shrimp in batches until golden brown, about 2-3 minutes per side. Drain on paper towels.
Asian Remoulade

In a small bowl, mix together mayonnaise, soy sauce, sriracha, lime juice, ginger, and garlic until well combined.
Green Papaya Slaw

In a large bowl, combine shredded green papaya, carrot, lime juice, fish sauce, cilantro, and salt. Toss well and set aside.
Garlic Fries

Cook French fries according to package instructions. In a large bowl, combine hot fries with minced garlic, parsley, and salt. Toss to coat.
Assembly

To assemble, split hoagie rolls and spread a generous amount of Asian remoulade on each side. Add fried coconut shrimp and top with green papaya slaw. Serve with garlic fries on the side.
