Preparing the Baked Fish

Prepare the Shrimp Crust
In a food processor, combine shrimp, coconut flakes, red curry paste, lime juice, olive oil, salt, and black pepper. Pulse until the mixture is well combined but still slightly chunky.

Coat the Fish
Preheat the oven to 400°F (200°C). Place the fish fillets on a lined baking sheet. Spread the shrimp mixture evenly over each fillet.

Bake the Fish
Bake in the preheated oven for 15-20 minutes or until the fish is cooked through and flakes easily with a fork.
Preparing the Green Papaya Slaw

Mix the Slaw Ingredients
In a large bowl, combine shredded green papaya, carrots, and fresh cilantro.

Make the Dressing
In a small bowl, whisk together lime juice, fish sauce, and sugar until well combined.

Combine and Serve
Pour the dressing over the slaw and toss to combine. Let it sit for 10 minutes before serving to allow flavors to meld.

In a saucepan, combine white rice and water. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes or until the rice is tender and water is absorbed.
