Prepare the Chips
In a large skillet, heat the vegetable oil over medium heat.

Fry the Crackers
Once the oil is hot, add the shrimp rice crackers in batches. Fry them until they puff up and become golden brown, about 2-3 minutes.

Add Seasoning
Remove the fried chips from the oil and drain them on paper towels. While they are still hot, sprinkle the tom yum seasoning and salt over the chips, tossing to coat evenly.

Cool Down
Let the chips cool completely before serving.

Roast the Ingredients
Preheat the oven to 400°F (200°C). Place the green chili peppers, garlic cloves, and shallots on a baking sheet and roast for about 15-20 minutes, until they are charred and tender.

Blend the Dip
Once roasted, let the ingredients cool slightly, then transfer them to a blender. Add cilantro, fish sauce, lime juice, and sugar. Blend until smooth.

Taste and Adjust
Taste the dip and adjust the fish sauce or lime juice as needed for your preferred flavor.

Serve
Transfer the Nam Prik Num dip to a serving bowl and serve with the Tom Yum Chips.
