Method

Preparing the Ribs

    Season the Ribs

    Rub the pork ribs with salt and black pepper, ensuring an even coating on all sides.

    Heat the Oil

    In a large oven-safe pot or Dutch oven, heat the olive oil over medium-high heat.

    Sear the Ribs

    Add the seasoned pork ribs to the pot and sear for about 4-5 minutes on each side until browned. Remove and set aside.

Making the Tamarind Sauce

    Combine Ingredients

    In the same pot, add the tamarind paste, brown sugar, soy sauce, minced garlic, minced ginger, water, lime juice, and red chili flakes.

    Cook the Sauce

    Stir the mixture well and bring it to a simmer over medium heat, allowing the sugar to dissolve completely.

Braising the Ribs

    Add the Ribs Back

    Once the sauce is simmering, return the seared pork ribs to the pot, ensuring they are coated with the tamarind sauce.

    Braise in the Oven

    Cover the pot and transfer it to a preheated oven at 300°F (150°C). Braise the ribs for 2.5 to 3 hours, or until the meat is tender and falling off the bone.

Glazing and Serving

    Glaze the Ribs

    Once the ribs are tender, remove them from the oven. Increase the oven temperature to 400°F (200°C).

    Reduce the Sauce

    On the stovetop, simmer the remaining sauce over medium heat until it thickens slightly, about 10 minutes.

    Coat and Bake

    Brush the thickened sauce over the ribs and place them back in the oven for 15-20 minutes to caramelize.

    Remove the ribs from the oven, let them rest for a few minutes, then slice and serve with extra tamarind sauce on the side.
