Tofu Preparation

Press and Cut Tofu
Press the firm tofu between two plates with a weight on top for about 30 minutes to remove excess moisture, then cut it into bite-sized cubes.

Marinate Tofu
In a bowl, mix the salt and black pepper. Toss the tofu cubes in this mixture and let marinate for 15 minutes.

Coat Tofu
After marinating, coat each tofu cube in rice flour evenly.
Frying Tofu

Fry Tofu
Carefully add the coated tofu cubes to the hot oil in batches. Fry until golden brown and crispy, about 5-7 minutes. Remove and drain on paper towels.
Pork Belly Mixture

Cook Pork Belly
In a separate skillet, sauté the finely chopped pork belly over medium heat until crispy, about 8-10 minutes.

Add Aromatics
Add the finely chopped lime leaves and garlic to the pork belly, cooking for an additional 2-3 minutes until fragrant.

Season the Mixture
Stir in the sugar and adjust seasoning as needed. Remove from heat.
Combine and Serve

In a large bowl, combine the crispy tofu with the pork belly mixture, tossing gently to combine.

Serve the salt and pepper fried tofu topped with puffed rice for added crunch.
