Dough Preparation

    Make the Dough

    In a mixing bowl, combine the all-purpose flour and salt. Gradually add water while mixing until the dough comes together. Knead the dough for about 5-7 minutes until it becomes smooth and elastic.

    Rest the Dough

    Cover the dough with a damp cloth and let it rest for at least 30 minutes.

Filling Preparation

    Cook the Filling

    In a skillet over medium heat, heat 2 tablespoons of vegetable oil. Add the chopped onion and sauté until translucent. Then, add minced garlic, grated ginger, and cook for another minute.

    Add the Meat

    Add the ground lamb and beef to the skillet. Cook until browned, breaking it apart with a spoon. Stir in curry powder, salt, black pepper, and green chilies. Cook for another 5 minutes until well combined.

    Finish the Filling

    Remove from heat and stir in chopped cilantro. Let the filling cool slightly.

Assembly and Cooking

    Divide the Dough

    After the dough has rested, divide it into 4 equal portions. Roll each portion into a ball.

    Shape the Pancakes

    On a lightly floured surface, roll out each ball into a thin circle. Place a generous amount of filling in the center of each circle.

    Fold and Seal

    Fold the edges of the dough over the filling to create a sealed pocket. Press down to ensure it is well sealed.

    Fry the Murtabak

    In a large skillet, heat 2 tablespoons of vegetable oil over medium heat. Place the stuffed pancake in the skillet and fry until golden brown on both sides, about 3-4 minutes per side.

    Serve

    Remove from the skillet and drain on paper towels. Cut into quarters and serve hot with your favorite dipping sauce.
