Tofu Skewers

Preparation

Prepare Tofu
Press the tofu to remove excess moisture by wrapping it in a clean kitchen towel and placing a weight on top for about 30 minutes. Cut the pressed tofu into 1-inch cubes.

Make Marinade
In a mixing bowl, combine sweet soy sauce, vegetable oil, ground ginger, ground coriander, garlic powder, red chili flakes, salt, and pepper. Whisk until well combined.

Marinate Tofu
Add the cubed tofu into the marinade and gently toss to coat. Allow the tofu to marinate for at least 30 minutes or up to 2 hours in the refrigerator for maximum flavor.

Prepare Scallion & Ginger Oil
Thinly slice the scallions and finely chop the ginger. Heat a small saucepan over medium heat and add 2 tablespoons of vegetable oil. Once hot, add scallions and ginger, and sauté for about 2-3 minutes until fragrant. Remove from heat and let it cool.

Assemble Skewers
Thread the marinated tofu cubes onto skewers, leaving a little space between each piece for even cooking.
Grilling

Preheat Grill
Preheat your grill or grill pan to medium-high heat.

Cook Skewers
Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally until the tofu is golden brown and slightly charred.

Serve
Remove skewers from the grill and drizzle with scallion and ginger oil before serving.
