Prepare the Barramundi
Pat the barramundi fillets dry with paper towels and season with salt. Set aside.

Chop the Vegetables
Slice the bell peppers, zucchini, and prepare the snow peas. Set aside.

Prepare Aromatics
Mince the garlic, grate the ginger, and chop the lemongrass.
Cooking

Sear the Barramundi
Heat a non-stick skillet over medium-high heat. Add a little oil and sear the barramundi fillets for about 3-4 minutes on each side or until they are golden brown and cooked through. Remove from the skillet and set aside.

Add Vegetables
Add the sliced bell peppers, zucchini, and snow peas to the skillet. Stir-fry for about 3-4 minutes until slightly tender.

Combine with Coconut Milk
Add the green curry paste and stir well to coat the vegetables. Then pour in the coconut milk, green chili sauce, fish sauce, lime juice, and sugar. Stir to combine and bring to a gentle simmer.

Finish the Dish
Return the seared barramundi to the skillet. Cook for an additional 2-3 minutes to heat through and let the flavors meld. Add fresh basil leaves just before serving.
