Fried Brussels Sprouts

Prepare the Brussels Sprouts
Trim the ends of the Brussels sprouts and cut them in half lengthwise.

Heat the Oil
In a large heavy-bottomed pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Brussels Sprouts
Carefully add the Brussels sprouts to the hot oil in batches, ensuring not to overcrowd the pot. Fry for about 5-7 minutes or until golden brown and crispy, stirring occasionally.

Drain and Season
Using a slotted spoon, remove the fried Brussels sprouts from the oil and place them on a paper towel-lined plate to drain excess oil. Season with salt and black pepper to taste.

Combine Ingredients
In a bowl, combine the chopped cilantro, mint leaves, lime juice, fish sauce, and sugar.

Whisk the mixture until the sugar is dissolved and the ingredients are well incorporated.

Roast the Green Chiles
Over an open flame or in a broiler, roast the green chiles until the skin is blistered and charred. Place them in a bowl and cover with plastic wrap to steam for about 10 minutes.

Peel and Chop
Once cooled, peel the charred skin off the chiles, remove the seeds, and chop them finely.

In a bowl, combine the chopped roasted green chiles, minced garlic, finely chopped shallot, lime juice, fish sauce, and sugar. Mix well.
