Prepare Shrimp Mousse

    Make the Mousse

    In a food processor, combine the raw shrimp, egg white, minced garlic, salt, black pepper, and cornstarch. Blend until a smooth paste is formed.

    Prepare the Bread

    Slice the French baguette or white bread into thick slices (about 1-inch thick).

    Coat with Mousse

    Spread a generous layer of the shrimp mousse over each slice of bread to cover it completely.

    Coat with Coconut

    Press the shrimp mousse side of each bread slice into the coconut flakes to ensure they stick well.

Fry the Toast

    Heat Oil

    In a deep frying pan or skillet, heat the vegetable oil over medium heat until it reaches about 180°C (350°F).

    Fry the Toast

    Carefully place the coated bread slices into the hot oil, frying in batches if necessary to avoid overcrowding. Fry until golden brown and crispy, about 3-4 minutes on each side.

    Drain Excess Oil

    Remove the fried toast from the oil and place them on a plate lined with paper towels to drain excess oil.
