Method
Preparation of Salad Base
Prepare the Vegetables
Wash the mixed salad greens thoroughly and dry them using a salad spinner or paper towels. Slice the cherry tomatoes in half. Peel the cucumber and slice it into thin rounds. Thinly slice the red onion.
Assemble the Salad Base
In a large salad bowl, combine the mixed salad greens, cherry tomatoes, cucumber, and red onion. Toss gently to mix.
Cooking the Salmon
Preheat the Oven
Preheat your oven to 400°F (200°C).
Prepare the Salmon
Pat the salmon fillets dry with paper towels. Drizzle olive oil over the fillets, followed by lemon juice. Season both sides with salt and black pepper.
Bake the Salmon
Place the salmon fillets on a baking sheet lined with parchment paper. Bake in the preheated oven for 12-15 minutes or until the salmon flakes easily with a fork.
Cool the Salmon
Once cooked, remove the salmon from the oven and let it cool slightly before flaking it into bite-sized pieces.
Making the Dressing
Combine Ingredients
In a small bowl, whisk together the olive oil, balsamic vinegar, Dijon mustard, honey, salt, and black pepper until well combined.
Taste and Adjust
Taste the dressing and adjust seasoning if necessary, adding more salt or pepper to your liking.
Assembling the Salad
Combine Salad and Salmon
Add the flaked salmon to the salad bowl with the mixed greens and vegetables.
Drizzle with Dressing
Pour the dressing over the salad and toss gently to ensure everything is evenly coated.
Serve
Serve the salmon salad immediately, garnished with additional black pepper if desired.
