Prepare the Pork

In a large bowl, combine the orange juice, lime juice, minced garlic, cumin, chili powder, oregano, salt, and black pepper. Add the pork shoulder and coat it thoroughly with the marinade. Cover and refrigerate for at least 2 hours, preferably overnight.

Cook the Pork

In a slow cooker, place the marinated pork shoulder and add chopped onion, bay leaves, and water. Cover and cook on low for 8-10 hours or until the meat is tender and easily shredded.

Shred the Pork

Once cooked, remove the pork from the slow cooker and shred it using two forks. Discard any excess fat and bay leaves.

Crisp the Pork (optional)

For crispy carnitas, spread the shredded pork on a baking sheet and broil for 5-10 minutes until edges are crispy.

Assemble the Tacos

Warm the corn tortillas in a skillet or microwave. Fill each tortilla with shredded pork, top with fresh cilantro, diced onions, and serve with lime wedges on the side.
