Prepare the Chicken
In a large skillet, heat vegetable oil over medium heat. Season the chicken breasts with salt and pepper, then cook until browned on both sides and cooked through, about 6-7 minutes per side. Remove from the skillet and set aside.

Blend the Mole Sauce
In a blender, combine the toasted nuts, spices, dark chocolate, bread, and 1 cup of chicken broth. Blend until smooth. Add more broth if necessary to achieve a pourable consistency.

Cook the Mole Sauce
Pour the blended mole sauce back into the skillet. Bring it to a simmer over medium heat. Cook for about 10 minutes, stirring occasionally to prevent sticking. Adjust seasoning with salt and pepper.

Combine Chicken with Mole Sauce
Return the cooked chicken breasts to the skillet, coating them well with the mole sauce. Simmer for an additional 5 minutes to heat through.

Serve the pollo mole garnished with sesame seeds, accompanied by rice or tortillas if desired.
