Cook the Chicken
Add the diced chicken to the skillet. Sprinkle in the cumin, chili powder, salt, and pepper. Cook until the chicken is no longer pink and fully cooked, about 7-10 minutes.
Assemble the Chimichangas
Remove the skillet from heat. Place a portion of the chicken mixture and a sprinkle of cheddar cheese in the center of each flour tortilla. Fold in the sides and roll tightly.
Fry the Chimichangas
In a deep frying pan, heat the vegetable oil over medium-high heat. Once hot, carefully add the chimichangas, seam side down. Fry until golden brown, about 3-4 minutes on each side.
Drain and Serve
Remove the chimichangas from the oil and place them on paper towels to drain excess oil. Serve hot with your favorite toppings.
