Prepare the Chicken

Season the chicken breasts with salt and pepper. Heat a skillet over medium heat and add a tablespoon of oil. Sauté the chicken for about 6-7 minutes on each side, or until fully cooked. Remove from the skillet and set aside.

Cook the Shrimp

In the same skillet, add another tablespoon of oil if needed and add the jumbo shrimp. Cook for about 3-4 minutes until they turn pink and opaque. Remove the shrimp and set aside.

In the skillet, add your house red sauce (store-bought or homemade) and bring to a simmer. Return the chicken to the skillet and top it with the shrimp.

Add Cheese

Sprinkle the Monterey jack cheese over the chicken and shrimp. Cover the skillet and allow it to cook on low for about 3-4 minutes until the cheese melts.

Prepare the Broccoli

While the cheese melts, steam or sauté the broccoli florets until tender but still bright green.

Once the cheese is melted, plate the chicken and shrimp, garnish with steamed broccoli and pico de gallo. Serve immediately.
