Prepare the Tripe
Rinse the beef tripe under cold water, then cut it into strips.

Cook the Tripe
In a large pot, add the tripe, water, and salt. Bring to a boil, then reduce heat and simmer for about 2 hours, or until the tripe is tender.

Prepare the Chili Sauce
While the tripe cooks, remove the stems and seeds from the guajillo and pasilla chilies. In a dry skillet, toast the chilies over medium heat until fragrant, about 2-3 minutes. Then, soak them in hot water for 15 minutes.

Combine and Simmer
Once the tripe is tender, add the chili sauce to the pot. Season with black pepper and adjust salt to taste. Simmer for an additional 30 minutes.

Serve
Ladle the soup into bowls and garnish with fresh cilantro and lime wedges. Serve with warm corn tortillas on the side.
