Prepare the Caramel
In a medium saucepan, combine the granulated sugar and water. Cook over medium heat, stirring until the sugar dissolves. Stop stirring and allow the mixture to boil until it turns a golden brown color. Quickly pour the caramel into a round baking dish, tilting to coat the bottom evenly. Set aside to cool and harden.

Combine and Bake
Pour the custard mixture over the hardened caramel in the baking dish. Place the baking dish in a larger baking pan and fill the larger pan with hot water, creating a water bath. Bake in a preheated oven at 350°F (175°C) for about 50-60 minutes, or until the flan is set and a knife inserted in the center comes out clean.

Cool and Serve
Remove the flan from the oven and let it cool to room temperature. Cover and refrigerate for at least 4 hours or overnight. To serve, run a knife around the edge of the flan, invert onto a serving plate, and let the caramel sauce flow over the top.
