Marinade and Steak

Method

Preparation and Cooking

  1. 1

    Prepare the Marinade

In a bowl, mix together olive oil, lime juice, minced garlic, chopped cilantro, ground cumin, salt, black pepper, and chili powder.

  2. 2

    Marinate the Steak

Place the skirt steak in a large resealable plastic bag or a shallow dish. Pour the marinade over the steak, ensuring it is well coated. Seal the bag or cover the dish and refrigerate for at least 2 hours, preferably overnight.

  3. 3

    Preheat the Grill

Preheat your grill to medium-high heat.

  4. 4

    Grill the Steak

Remove the steak from the marinade and allow excess marinade to drip off. Place the steak on the grill and cook for about 4-5 minutes per side for medium-rare, or until desired doneness.

  5. 5

    Rest and Slice

Once cooked, remove the steak from the grill and let it rest for 5 minutes before slicing against the grain.

  6. 6

    Serve

Serve hot with your choice of rice and beans or maduros (fried sweet plantains).
