Prepare the Ingredients

Rinse the basmati rice under cold water until the water runs clear. Mince the garlic cloves.

Fry the Vermicelli

In a large pot, heat 1 tablespoon of olive oil over medium heat. Add the vermicelli noodles and fry until golden brown, stirring frequently. Remove and set aside.

Cook the Rice

In the same pot, add another tablespoon of olive oil if needed. Add the minced garlic and sauté until fragrant. Add the rinsed basmati rice and stir to coat the rice with oil and garlic. Cook for about 2 minutes.

Add Water and Spices

Pour in 2 cups of water, add salt, black pepper, and cinnamon. Stir to combine and bring to a boil.

Simmer the Rice

Once boiling, reduce the heat to low, cover the pot, and simmer for about 15 minutes or until the rice is fully cooked and water is absorbed.

Prepare the Eggs

While the rice cooks, beat the eggs in a bowl. In a separate non-stick pan, scramble the eggs over medium heat until just set. Remove from heat.

Combine and Serve

Once the rice is done, fluff it with a fork. Gently fold in the fried vermicelli and scrambled eggs. Serve warm.
