Make the Dough

Mix Ingredients
In a large mixing bowl, combine flour and salt. Make a well in the center and add the yeast mixture and olive oil.

Knead the Dough
Mix until a dough forms, then knead on a floured surface for about 10 minutes until smooth.

Let it Rise
Place the dough in a greased bowl, cover with a cloth, and let it rise in a warm place for about 1 hour until doubled in size.

Make the Za'atar Mixture
In a small bowl, mix za'atar spice and olive oil until combined.
Shape and Bake

Preheat Oven
Preheat your oven to 475°F (245°C).

Shape the Dough
Divide the dough into small balls (about the size of a golf ball). Roll each ball into a small round flatbread.

Add Toppings
Place the rolled dough on a baking sheet, spread the za'atar mixture on top, and add any optional toppings like cheese or olives.

Bake in the preheated oven for 8-10 minutes or until the edges are golden brown.
