Prepare the Potatoes
Wash and peel the russet potatoes. Cut them into thick fries (about 1/2 inch wide). Rinse the cut fries in cold water to remove excess starch and pat them dry with paper towels.

Heat the Oil
In a deep fryer or a large heavy pot, heat the vegetable oil to 350°F (175°C). Use a thermometer to ensure the correct temperature.

Fry the Potatoes
Carefully add the fries in batches to the hot oil. Fry them for about 5-7 minutes until golden brown and crispy. Remove them with a slotted spoon and drain on paper towels.

Season the Fries
While the fries are still hot, sprinkle them with salt, paprika, garlic powder, onion powder, and cayenne pepper. Toss to coat evenly.

Serve with Toum
Serve the seasoned fries warm with a side of toum for dipping.
