Preparing the Falafel

Soak and Blend
If using dried fava beans, soak them overnight. Drain and rinse the fava beans and chickpeas. In a food processor, combine the soaked fava beans, chickpeas, chopped onion, garlic, parsley, cumin, coriander, baking powder, salt, and black pepper. Pulse until the mixture is coarsely ground but not pureed.

Form the Bites
Transfer the mixture to a bowl and add flour. Mix well and form small balls or patties (about 1-2 inches in diameter).

Heat Oil
In a deep frying pan, heat vegetable oil over medium heat until hot (around 350°F/175°C).

Fry the Falafel
Carefully add the falafel balls in batches to the hot oil. Fry until golden brown on all sides, about 3-4 minutes. Remove and drain on paper towels.

Make the Sauce
In a small bowl, whisk together tahini, minced garlic, lemon juice, water, and salt until smooth. Adjust the consistency with more water if necessary.
