Preparation

1. Make Black Bean Puree

In a blender, combine black beans, garlic, lime juice, cumin, salt, and pepper. Blend until smooth and set aside.

2. Fry Plantains

Peel and slice plantains diagonally. Heat vegetable oil in a frying pan and fry slices until golden brown. Drain on paper towels.

3. Prepare Tequila Queso

In a saucepan, combine cheddar cheese, milk, and tequila. Stir over low heat until melted and smooth. Add diced jalapeño and salt to taste.

Assemble Quesadilla

4. Build Quesadilla

On one half of each tortilla, layer grilled chicken, jalapeño cheddar cheese, and a spoonful of black bean puree. Fold the tortilla over.

5. Cook Quesadilla

Heat a skillet over medium heat and cook each quesadilla for about 3-4 minutes on each side until golden and crispy. Remove from skillet.

Serve

6. Plate the Dish

Cut the quesadilla into wedges and serve with fried plantains, diced tomato, red onion, and cilantro. Drizzle with tequila queso.
