Method
Citrus Poached Salmon

Prepare Poaching Liquid
In a large saucepan, combine orange juice, lemon juice, salt, and black pepper. Bring to a simmer.

Poach Salmon
Add salmon fillets to the saucepan, cover, and poach for about 10-12 minutes or until cooked through. Remove and set aside.
Poached Eggs

Prepare Poaching Water
In a separate pot, bring water to a gentle simmer and add vinegar.

Poach Eggs
Crack each egg into a small bowl, then gently slide it into the simmering water. Poach for about 3-4 minutes until whites are set but yolks are still runny. Remove with a slotted spoon.
Hollandaise Sauce

Melt Butter
Melt the butter in a small saucepan and let it cool slightly.

Blend Egg Yolks
In a blender, combine egg yolks, lemon juice, and salt. Blend until thick and pale.

With the blender running, slowly drizzle in the melted butter until emulsified. Add cayenne pepper to taste.
Toast and Home Fries

Toast Bread
Toast the Texas toast slices until golden brown.
Assembly

Plate the Dish
On each slice of Texas toast, place a piece of poached salmon, followed by a poached egg. Drizzle with hollandaise sauce and serve with home fries on the side.
