Method

Prepare the Chicken

    Coat the Chicken

    Preheat your oven to 400°F (200°C). In a bowl, whisk the egg. In another bowl, combine flour, salt, and pepper. Dip each chicken breast into the flour mixture, then the egg, and finally coat with crushed Cheetos.

    Bake the Chicken

    Place the coated chicken breasts on a baking sheet and bake for 20-25 minutes or until cooked through and golden brown.

Make the Black Bean Puree

    Blend Ingredients

    In a blender or food processor, combine black beans, minced garlic, lime juice, olive oil, cumin, and salt. Blend until smooth and set aside.

Prepare the Cilantro Rice

    Mix the Rice

    In a bowl, combine cooked rice, chopped cilantro, lime juice, and salt. Mix well and set aside.

Make the Avocado Puree

    Blend Avocado

    In a bowl, mash the avocado with lime juice and salt until smooth. Set aside.

Assemble The Pip

    Layer the Ingredients

    On a chipotle tortilla, spread a layer of black bean puree, followed by cilantro rice, sliced Cheeto crusted chicken, avocado puree, shredded cheddar, and halved cherry tomatoes.

    Add Dressing and Roll

    Drizzle red pepper ranch dressing over the top and roll the tortilla tightly. Slice in half and serve.
