Marinated Flank Steak

    Marinate the Steak

    In a bowl, combine olive oil, minced garlic, lime juice, cumin, salt, and black pepper. Add flank steak and coat well. Cover and refrigerate for at least 1 hour, or overnight for best results.

    Grill the Steak

    Preheat grill to medium-high heat. Remove steak from marinade and grill for 6-8 minutes on each side for medium-rare. Let it rest before slicing.

Sweet Potato Hash

    Cook the Sweet Potato Hash

    In a large skillet, heat olive oil over medium heat. Add diced sweet potatoes and cook for about 10 minutes until they are tender. Add diced onions and bell peppers, and season with salt and pepper. Cook until vegetables are tender and slightly caramelized, about another 5-7 minutes.

Chimichurri Sauce

    Prepare the Chimichurri

    In a mixing bowl, combine chopped parsley, minced garlic, red wine vinegar, olive oil, red pepper flakes, and salt. Mix well and let sit for at least 15 minutes for flavors to meld.

Assembly

    Assemble the Chimichurri Burrito

    On each flour tortilla, layer the sweet potato hash, sliced flank steak, chimichurri sauce, and crumbled feta cheese. Roll the tortilla tightly and serve.
