Preheat the Oven

Preheat your oven to 350°F (175°C) and grease a 9x13 inch baking pan.

Melt the Butter

In a medium saucepan, melt the butter over low heat. Remove from heat and stir in sugar, eggs, and vanilla until well blended.

Combine Dry Ingredients

In a separate bowl, whisk together the flour, cocoa powder, baking powder, and salt.

Mix Everything Together

Gradually add the dry ingredients to the butter mixture, mixing until just combined. Stir in the peppermint extract and chocolate chips.

Bake the Brownies

Pour the brownie batter into the prepared baking pan and spread evenly. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
