Po' Boy Preparation

  1. 1

    Prepare the Shrimp

In a large bowl, combine the buttermilk and eggs. Whisk until smooth. In another bowl, mix the cornmeal and flour. Dip each shrimp in the buttermilk mixture, then coat with the cornmeal mixture.

  2. 2

    Fry the Shrimp

Heat oil in a deep fryer or large skillet to 350°F (175°C). Fry the shrimp in batches for 3-4 minutes or until golden brown. Remove and drain on paper towels.

  3. 3

    Assemble the Po' Boy

Slice the French bread lengthwise, leaving one side attached. Spread a layer of remoulade or BBQ sauce inside the bread, add the fried shrimp, top with shredded lettuce and sliced pickles.
