Jambalaya Preparation

    Prepare the Ingredients

    Chop the onion, bell pepper, and celery into small pieces. Mince the garlic cloves. Cut the chicken breast into bite-sized pieces and slice the andouille sausage.

    Cook the Meat

    In a large pot, heat the olive oil over medium-high heat. Add the sliced andouille sausage and cook until browned. Then, add the chicken pieces and cook until no longer pink.

    Sauté the Vegetables

    Add the chopped onion, bell pepper, celery, and minced garlic to the pot. Sauté until the vegetables are softened, about 5 minutes.

    Add Tomatoes and Spices

    Stir in the diced tomatoes, cajun seasoning, bay leaves, salt, and black pepper. Cook for another 3-4 minutes to combine the flavors.

    Add Rice and Broth

    Add the long grain rice and chicken broth to the pot. Bring the mixture to a boil, then reduce the heat to low.

    Simmer

    Cover the pot and let it simmer for about 20 minutes, or until the rice is cooked and has absorbed most of the liquid.

    Add Shrimp

    Stir in the shrimp and cook for an additional 5 minutes, or until the shrimp are pink and cooked through.

    Serve

    Remove the bay leaves and stir in the chopped parsley. Serve warm.
