Brewing Process

Prepare the Mash
In a large brew kettle, heat 5 gallons of water to around 160°F (71°C). Add 10 lbs of crushed barley and 2 lbs of corn to the hot water. Stir well to combine, ensuring there are no dry clumps of grain. This mixture is called the mash.

Mash Rest
Allow the mash to rest for about 60 minutes at 150°F (65°C). This process converts the starches in the barley and corn into fermentable sugars.

Sparging
After the mash rest, sparge the grains by rinsing them with hot water. Use enough water to collect a total of 6-7 gallons of wort (the liquid extracted from the mash).

Boiling the Wort
Bring the wort to a boil. Once boiling, add 0.5 lbs of hops. Boil for 60 minutes, stirring occasionally to prevent scorching.

Cooling the Wort
After boiling, cool the wort quickly using a wort chiller or an ice bath until it reaches about 70°F (21°C).

Fermentation
Transfer the cooled wort to a sanitized fermentation vessel. Add the yeast and seal the vessel with an airlock. Allow it to ferment at room temperature for about 1-2 weeks.
