Prepare the Marinade

In a large bowl, combine pineapple juice, minced garlic, dried oregano, cumin, chili powder, paprika, salt, black pepper, and white vinegar. Mix well until all ingredients are combined.

Marinate the Pork

Cut the pork shoulder into small chunks and add it to the marinade. Ensure all pieces are well coated. Cover the bowl with plastic wrap and refrigerate for at least 4 hours, preferably overnight.

Preheat your grill or a skillet over medium-high heat. Remove the pork from the marinade and discard the marinade. Grill the pork for about 15-20 minutes, turning occasionally, until cooked through and slightly charred. Let it rest for a few minutes before slicing it into small pieces.

Prepare the Tacos

Warm the corn tortillas on the grill or in a skillet for about 30 seconds on each side until soft. Assemble the tacos by adding a generous amount of the grilled pork, diced pineapple, chopped onion, and fresh cilantro.
