Preparing the Steak

Marinate the Steak

In a bowl, combine the olive oil, minced garlic, lime juice, salt, and black pepper. Add the flank steak and coat it well with the marinade. Cover and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.

Grill the Steak

Preheat your grill to medium-high heat. Remove the steak from the marinade and grill for about 4-6 minutes per side, or until it reaches your desired doneness. Use a meat thermometer to ensure it reaches 135°F for medium-rare.

Rest and Slice the Steak

Once grilled, remove the steak from the grill and let it rest for 5-10 minutes. Slice the steak against the grain into thin strips.

Sauté the Onions

In a skillet over medium heat, add a little olive oil and sauté the chopped onion until translucent and slightly caramelized, about 5-7 minutes.

Assemble the Tacos

Warm the corn tortillas in a dry skillet or microwave until pliable. Place a few slices of steak on each tortilla, top with sautéed onions, and garnish with fresh cilantro.

Serve the tacos immediately with lime wedges on the side for squeezing over the tacos.
