Method

Marinating the Pork

Prepare Marinade

In a bowl, combine pineapple juice, minced garlic, oregano, cumin, paprika, salt, black pepper, and olive oil. Mix well.

Marinate Pork

Cut the pork loin into small cubes. Add the pork to the marinade, ensuring all pieces are coated. Cover and refrigerate for at least 2 hours, preferably overnight.

Cooking the Pork

Grill the Pork

Preheat your grill to medium-high heat. Remove the pork from the marinade and grill for about 8-10 minutes until cooked through, turning occasionally. Remove from heat and let rest before chopping into small pieces.

Making the Green Chile Sauce

Cook the Sauce

In a pot over medium heat, sauté the chopped onion and minced garlic until soft. Add the diced pork, green chile peppers, chicken broth, cumin, salt, and black pepper. Bring to a simmer and cook for about 15-20 minutes.

Assembling the Burrito

Prepare the Filling

In a large bowl, combine the grilled chopped pork, cooked rice, and whole beans.

Fill the Tortillas

Lay a tortilla flat, add a generous portion of the pork mixture, spoon some green chile sauce over the top, and sprinkle with shredded Monterey Jack cheese.

Wrap the Burrito

Fold in the sides of the tortilla and then roll from the bottom up to enclose the filling. Repeat with remaining tortillas.

Serve

Serve the burritos warm, topped with additional green chile sauce and pico de gallo.
