Dough Preparation
Mix Dry Ingredients
In a large bowl, combine 2 cups of all-purpose flour, 1 tablespoon of baking powder, and 0.5 teaspoon of salt. Mix well.
Add Wet Ingredients
Add 2 tablespoons of vegetable oil and 0.75 cups of warm water to the dry ingredients. Stir until the dough begins to come together.
Knead the Dough
Transfer the dough to a floured surface and knead for about 5 minutes until smooth and elastic.
Rest the Dough
Cover the dough with a clean kitchen towel and let it rest for 30 minutes.
Frying the Sopapillas
Heat Oil
In a deep frying pan or pot, heat 4 cups of vegetable oil over medium-high heat until it reaches 375°F (190°C).
Roll Out the Dough
On a floured surface, roll out the rested dough to about 1/8 inch thick. Cut into squares or triangles.
Fry the Sopapillas
Carefully place a few pieces of the dough into the hot oil. Fry until they puff up and turn golden brown, about 2-3 minutes on each side. Remove and drain on paper towels.
