Preparing the Broth

    Make the Prawn Broth

    In a large pot, heat 2 tablespoons of olive oil over medium heat. Add the garlic cloves (minced) and onion (diced) and sauté until the onion is translucent.

    Add Water and Prawns

    Add 4 cups of water and the prawns to the pot. Bring to a boil, then reduce heat and let simmer for about 15 minutes until the prawns are cooked through.

    Strain the Broth

    Remove the prawns and strain the broth to remove any solids. Set the broth aside and peel the prawns, chopping them into bite-sized pieces.

Cooking the Vegetables

    Prepare the Vegetables

    Peel and chop the potatoes and carrots into small cubes. Chop the zucchini into half-moon shapes.

    Cook the Vegetables

    In the same pot, add the strained broth back in and bring it to a simmer. Add the chopped potatoes, carrots, salt, and black pepper. Cook for about 10 minutes until the vegetables are tender.

    Finish the Soup

    Add the chopped zucchini and the reserved prawns back into the pot. Cook for an additional 5 minutes. Adjust seasoning if necessary.

Serving the Soup

    Prepare Garnish

    While the soup is cooking, prepare the garnish by finely chopping the small onion, dicing the tomatoes, and slicing the avocado. Chop the cilantro roughly.

    Serve

    Ladle the hot soup into bowls and serve it with the prepared garnish on the side: diced onion, tomatoes, cilantro, avocado, and lime wedges.
