Prepare Shrimp and Sauce

    Sauté Shrimp and Mushrooms

    In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant. Add the shrimp and cook for 2-3 minutes until they turn pink.

    Add Mushrooms

    Add sliced mushrooms to the skillet and continue to sauté for another 3-4 minutes until the mushrooms are tender.

    Season and Add Sauce

    Sprinkle cumin, paprika, salt, and black pepper over the shrimp and mushrooms. Stir well to combine, then pour in the red sauce. Let simmer for 5 minutes to allow flavors to meld.

Assemble Burritos

    Prepare Tortillas

    Warm the flour tortillas in a dry skillet or microwave for a few seconds until pliable.

    Fill Tortillas

    On each tortilla, layer a portion of the shrimp and mushroom mixture, followed by a generous spoonful of salsa verde and a sprinkle of Monterey Jack cheese.

    Roll Burritos

    Fold in the sides of the tortilla and roll it up tightly from the bottom to the top. Ensure the filling is secure inside.

    Melt Cheese

    Return the rolled burritos to the skillet and cook on medium heat for 2-3 minutes on each side until the tortillas are golden and the cheese is melted.

Serve

    Serve the burritos with a side of cooked rice and refried beans. Garnish with extra salsa verde if desired.
