Sauté Shrimp and Mushrooms
In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant. Add the shrimp and cook for 2-3 minutes until they turn pink.

Assemble Burritos

Prepare Tortillas
Warm the flour tortillas in a dry skillet or microwave for a few seconds until pliable.

Fill Tortillas
On each tortilla, layer a portion of the shrimp and mushroom mixture, followed by a generous spoonful of salsa verde and a sprinkle of Monterey Jack cheese.

Roll Burritos
Fold in the sides of the tortilla and roll it up tightly from the bottom to the top. Ensure the filling is secure inside.

Melt Cheese
Return the rolled burritos to the skillet and cook on medium heat for 2-3 minutes on each side until the tortillas are golden and the cheese is melted.
Serve

Plate and Serve
Serve the burritos with a side of cooked rice and refried beans. Garnish with extra salsa verde if desired.
