Cook the Chorizo
In a skillet over medium heat, add the chorizo sausage. Cook for about 5-7 minutes, breaking it apart with a spatula until it is browned and fully cooked. Drain any excess fat.

Prepare the Cheese
While the chorizo is cooking, preheat your oven to 350°F (175°C). In a mixing bowl, combine the Monterey Jack cheese with half of the diced tomatoes and half of the chopped green onions. Mix well until evenly distributed.

Layer the Ingredients
In an oven-safe dish, spread the cooked chorizo evenly across the bottom. Then, pour the cheese mixture over the chorizo, covering it completely.

Bake the Queso Fundido
Place the dish in the preheated oven and bake for 15-20 minutes or until the cheese is melted and bubbly. Keep an eye on it to prevent burning.

Remove the dish from the oven. Sprinkle the remaining diced tomatoes and chopped green onions over the top for a fresh garnish.
