Prepare the Protein

    Protein Selection

    Choose your protein: shrimp, grilled chicken, al pastor, or carne asada.

    Cooking the Protein

    In a skillet, heat olive oil over medium heat. Add your chosen protein.

    Season and Cook

    Season the protein with ground cumin, paprika, salt, and black pepper. Cook until the shrimp is pink, chicken is cooked through, pork is caramelized, or beef is cooked to your liking, about 5-7 minutes.

Assemble the Quesadilla

    Prepare the Tortilla

    Lay the large flour tortilla flat on a clean surface.

    Add Cheese

    Sprinkle half of the jack and cheddar cheese evenly over one half of the tortilla.

    Add Protein

    Add the cooked protein on top of the cheese.

    Fold the Quesadilla

    Top the protein with the remaining cheese and fold the tortilla over to cover the filling.

Cook the Quesadilla

    Heat the Skillet

    In the same skillet used for the protein, add a little more olive oil if necessary and heat over medium heat.

    Carefully place the folded quesadilla in the skillet and cook for about 3-4 minutes on each side, or until the tortilla is golden brown and the cheese is melted.

Serve the Quesadilla

    Remove the quesadilla from the skillet and let it cool for a minute before cutting it into wedges.
